What is the truffle
The truffle is a treasure of nature, an unmistakable concentrate of aromas and flavors, the result of the prodigious creative force of nature, which manages to elaborate and shape in a single whole the elements deriving from sunlight, water, air and from the organoleptic substances present in the soil, to give us a product of unparalleled originality.
Already some ancient peoples, certainly the Greeks and Romans, knew and appreciated the truffles.
These, which according to them were mistakenly considered tubers, already at that time aroused a fascination and a sense of mystery so strong that they were called “sons of thunder”.
An imaginative and legendary definition, but which contributed to creating that aura of mystery and magic around the truffle right from the start, which still persists to this day.
How to store the White Truffle
Many ask us how it is possible to preserve the truffle, in fact, the answer is quite immediate: DO NOT keep it!
Try to eat it as soon as possible, as during storage it tends to lose many of its organoleptic qualities.
When it cannot be used immediately, we recommend storing it in the refrigerator, at a temperature of 4/5 degrees, in a closed jar wrapped in classic kitchen paper.
It is essential to replace the paper that wraps the truffle every day.
The closed jar will prevent the aroma from dispersing in your refrigerator, making your milk become “truffled” too.
It is not recommended to keep the truffle dipped in rice in a closed jar.
How to Clean the White Truffle
The truffle should only be washed at the time of use (30 minutes before), under cold, slow running water; gently try to remove any part of the soil using a soft bristle brush.
Once washed, dry the truffle thoroughly with kitchen paper.
Let the truffle breathe at room temperature and… enjoy your meal!
How to cut the White Truffle
Whether you are passionate collectors or ‘simple’ truffle consumers, you probably know that truffles must be cut using a special tool: the truffle slicer.
The most advanced ones are made of stainless steel or wood and are almost always equipped with a washer that allows you to calibrate the thickness of the cut.
They can have a smooth or serrated blade: the smooth blade allows you to cut thinner slices while the serrated blade is easier to use for harder truffles.
